This is a simple cake, and absolutely delicious! Important is to neutralize the baking soda so you don’t get a the fuzzy-soda flavour from it. You do that by simply putting it in a glass with a bit of vinegar or lemon or any other acidic thing (that is safe to eat!).
You can put the batter in one big or a few small forms like you see in the photo, more muffin style.
It’s good with vegan butter and a raspberry on it! Or you know, whatever you feel like. Treat it like cake-bread. 😉
