These days, weeks and months have been really busy for me, and it seems – for everyone around me. This wrap is an example of what I eat when I don’t have time to cook.
Fold the tortilla wrap in 4, this way it fits in the toaster, then refold it so the soft parts face outwards and toast again, just until they warm and start to crisp up, you don’t want to make chips of them this time.
I always have canned chick peas at home, just bought a whole tray, our local green grocer had a huuge discount on them 12 for 40kr. Not organic though.
Smeared on some vegan mayo, but that could be hummus, or tahini dressing too. Topped with pickled peppers and sprinkled with spices.
Not especially proud of this creation but it does the trick on keeping me going on a high speed day.
