Waffle Sundays happen at least once a month at Maggi’s and Ieva’s place. And anytime we have guests staying over or if someone joins for brunch. It is easy, festive and no big preparations needed. It’s also a perfect way to use leftovers and random items from the pantry (like most of the stuff we cook!).
We have now perfected the waffle batter (which can be freely altered with different spices and ingredients), but the main part is all the toppings and endless variations of both sweet and savory flavours.
- 1 and 3/4 cups “milk”
- 1/2 cup oil (neutral or coconut)
- 2 cups flour (whole wheat is good!)
- 1 tbsp sugar (a bit more if you like it sweet)
- 3 tsp baking powder (or soda)
- pinch of salt
- 1 ripe banana (smashed/squished/spattered)
Feel free to add carrots, cinnamon, cardamom, vanilla, berries, nuts, coconut flakes or any other ingredients that come to mind.
We like to make one warm topping. For that you can use the leftovers of your stew from last night, fry some mushrooms, make a quick veggie mix with tomato sauce, fry marinated tofu, stew some spinach with nutmeg, shred some carrots and saute them with onion and garlic, etc…etc..let your fantasy free!
Plate up some fresh veggies; our essentials are cucumber, avocado, rucola and cilantro (koreander). Sliced fresh fruit are also wonderful!

You get the idea. 😉 It is all about mixing and matching and eating with your hands and building a custom made unique experience with every bite.
Another reason why we love waffles so much is the social aspect of it. You can have your iron right on the table and bake the delicious hearts while having a conversation, you can also share and try out the crazy combinations that you friends came up with, and everyone can choose to put on exactly wh
at they like no matter how picky or restricted by allergies. Everybody wins. Waffle on!
P.s: You will need a waffle iron. If you are about to purchase one, we recommend to look out that it is heavy enough and sometimes the used ones are much better than new and don’t stick! So check your local second hand store for some old school irons that never break.
